Stéphane Moreau’s vision is continued on by his assistant winemaker and wife Virginie, who produce lifted, Dauvissat-style wines amongst the new generation of Chablis producers. Extensive sur-lie aging and healthy fruit create vivacious wines marked by chalky, saline-tinged acidity.
Fruit for ‘Montmains’ comes from 70-year-old vines rooted in deep blue clay and limestone soils, located just across the way from Les Vaillons, in a small .65 hectare plot of old vines. The wine is leesy, creamy, and round, marked by flavors of ripe citrus, oyster shell, and wet stones. An insane value for the price!
