The Chevillons are no strangers to vinifying great Pinot, and ‘Les Cailles’ is no exception. Fruit for this epic single-vineyard wine comes from a stony plot of vines planted in the 1930s. The wine is insanely aromatic and elegant, marked by flavors of ripe cherries, dried flower petals, vanilla spice, and candied orange peel. Although designated 1er Cru, we really find this bottle to be of Grand Cru stature.
