‘Nuits d’Ivresse’ (Drunken Nights) is Catherine and Pierre Breton’s homage to Jules Chauvet and his eschewing of added sulfur. This bottle of peppery Cabernet Franc comes from 50-year-old vines and is vinified without any added SO2. The wine is all black fruit, spice, bramble, and moist earth. Loire wine lovers, give it a whirl and serve slightly chilled.
