Chateau Yvonne was first founded by monks in the 1500s, resuscitated to life by Jean-Francois and Yvonne Lamunière 500 years later. Just over a decade ago, Matthieu Vallée took over operations at this renowned chateau farms the estate’s 11 hectares, and continues to farm organically and biodynamically, with the same hands off-mentality implemented in the cellar as his predecessors.
The 2020 Saumur-Champigny is spicy and earth-driven, full of herbaceous red fruit flavors and marked minerality. This would be spot on for summer meals, refreshing but well structured. Serve with a slight chill and be ready to drink the whole bottle!
