This Merlot-dominant (95%) blend from Moulin Pey-Labrie is one for the books. This is the only wine that the estate makes, and 1988 was the first vintage that Bénédicte and Grégoire Hubau produced. Fruit is hand-harvested, destemmed, and naturally fermented in steel-lined concrete tanks, with punchdowns executed regularly. The wine is then aged for 18 months in barriques (30-50% new). Now with 30+ years on it, the wine is absolutely singing. Tertiary notes of stewed red fruits, tobacco, and sweet spice lead to an herbaceous, slightly vegetal finish.
