This tart and tasty Gruner Veltliner is inspired by Graham Tatomer’s love for all things Austria (Tatomer worked under Emmerich Knoll for three years). Notes of zesty green apple, herbal tea, white pepper, and celery salt dominate the wine’s textured and thirst-quenching palate. Fruit for ‘Paragon’ comes from a west-facing vineyard laden with marl, quartz, and limestone soils, located just south of San Luis Obispo.
