2018 is regarded as a benchmark vintage for the Pillot family. Led by Thierry Pillot (along with his father, Paul and his sister Chrystelle) since 2004, Domaine Paul Pillot has reputation for making some of the region’s most celebrated wines. Some describe his style as understated, but that’s not to say there isn’t texture and length in his wines. On the contrary, the wines speak for themselves and the terroir without missing a beat.
This bottled comes from three parcels in Chassagne, with fruit from three lieu dits: Les Chaumes, Le Concis du Champs, Les Plantes Mornieres with vines 55+ years old. Fermented with indigenous yeast and aged in oak for a year. Balanced, lively, and concentrated with broad orchard notes that lead to a long finish. Spot on with zesty grilled shrimp.
